Lazy

I'm so glad its the weekend! I know it will go by quicker than it came, but i'm still glad its here! This six weeks in my fashion design class we are able to make as many personal projects we can so I will spend the weekend looking up things for that, reading all my books that I have started and am yet to finish, and making these new amazing cookies that i'm looking forward to cooking! They look wonderful!


Toasted Coconut Cookie Bars

Lately, I’ve been seeing my friend, Heather Christo, post these absolutely drool-worthy photos of sugar cookie bars all over the Internets. Heather has a book coming out soon and I’m SO excited about it! I can’t wait to get my little paws on a copy.
Anyway, the cookie bars divine with a thick sugar cookie base and frosting on top. I knew I had to make an Easter version. You guys, if you’re a coconut fan you’re going to go crazy over these! They’re absolutely addicting. They sort of remind me of those thick lofthouse cookies. So bad…but oh, so good.
The special part about these bars though is the frosting. It’s a basic buttercream frosting with tons of toasted flaked coconut in it, giving each bite of cookie bar a sweet crunch.

The photo above is my second batch of toasted coconut. The first batch I tried to toast in the oven, since I’m such a genius {note the sarcasm here}, and about four minutes later my kitchen was filled with smoke. I couldn’t believe how much smoke there was from a pan of coconut. Maybe that’s a sign to clean my oven? I frantically flung the back door open, threw the black coconut into the sink, took a deep breath and then started over. On the stove.
Moral of the story? Toast your coconut on the stove….and keep an eye on it.
I brought these bars to our community group last Thursday night and everyone loved them! Everyone except Adam. I don’t know how I got roped into marrying a coconut-hater, but it’s happening.
I guess that means more for me.
Toasted Coconut Cookie Bars
yields about 2 dozen bars
Sugar cookie bar recipe adapted from Heather Christo
Ingredients:
for cookie bars—
2 sticks butter, room temperature (1 cup)
3/4 cup powdered sugar
2 egg yolks
2 tsp vanilla extract
2 1/4 cups all purpose flour
1/4 tsp salt
for toasted coconut frosting —
3/4 cup sweetened flaked coconut
2 sticks butter, room temperture
2 cups powdered sugar
Directions:
Preheat oven to 350 degrees. Spray a 9 x 12″ pan well with nonstick cooking spray.
Beat together the butter and powdered sugar until light and fluffy. Add the vanilla and egg yolks and keep beating until well combined. Add the flour and salt and mix until a soft dough forms.
Press dough into the bottom of your pan and prick several times with a fork. Bake for about 20-23 minutes until edges are golden brown.
Let cookie bar base cool completely before frosting.
To make the frosting, toast the coconut in a small pan over medium/high heat. Watch this — it burns quick! You want nice golden brown bits of coconut.
After the coconut has been toasted, set aside. Cream together the butter and powdered sugar until very light and fluffy. Add the coconut, reserving two tablespoons. Mix well. Spread frosting over bars and sprinkle extra toasted coconut on top. Slice into little squares and serve!

I am also looking forward to playing a bit of skyrim, and my new games I ordered on Amazon, I finally decided to get the first two Spyros for myself and am now not having to play them at my cousins house! I was obsessed with the third spyro for a while and now im excited to see how well I like replaying the first two! I also got Lego Harry Potter years one through four, I know.... lame and nerdy! But i'm such a huge harry potter fan I wanted to try it out! I also want to do a video of some kind of commentary on some kind of game with a few friends and finally get a video posted on my youtube channel and on here! I'm hoping that's in store this weekend too! im looking forward to a long weekend of relaxation and fun, powering up for all the TAKS testing next week! Will blog tomorrow on how the cookies went! Shrimp

I love shrimp, and its most likely my favorite food, but man this stuff I ate last night, its doing me a awful number! (I know you totally wanted to read that and know that about me XD) This weekend I didnt get much done, went to the movies with some friends, did all my endless bio homework and did quite a bit of cleaning. I recently got back into Pinterest! That occupied alot of my weekend. As did black ops 2, finally got prestige, and im excited to start over as a main sniper(gonna be kinda hard, im used to running in and taking everyone out in a good amount of time, not waiting and camping for my kills) Anyways, got a little bit of organization done, looked at some curtains but no success. Im really looking forward to summer, im trying to get the beach body I want, im pretty far away but I just need to stay motivated! Anyways I was messing around on YouTube and I ended up at one of my favorite old songs by an amazing man Pat Green, the song was Wave on Wave of course, and I stumbled on this video, and it was about my two favorite people from lost! I named my car after this man for Gods sakes! And the women that he is SUPPOSED to be with is with another, and i guess you just have to watch the show. But they are my FAVORITE "couple" from the amazing show Lost and I was amazed that this AMAZING song was about them! Highlight of my weekend!

Friday!

It's nearing Friday! Nothing much went on this week, failed a bio test and passed a math one, which is weird normally it's the other way around! It's exam week, Bleh, physics test tomorrow and the rest of the day should be easy, jeans day and college shirt day! Going to be representing the SEA AGGIES! Gig em! I'm back into Nikita, really missed that show, it's so amazing and I would defiantly recommend it(its not Netflix)! I'm also thinking about restarting the True Blood books! They are so good and I didn't read a few of the last ones that I now have! Recently bought Assassins Creed three, really like the multiplayer, if I could only get a hang of it!
Well nothing going on this weekend, some SAT studying with a few friends and a whole lot of relaxation. I ran my half a mile and Im going to take a hot bath and start my "Dead Untill Dark" by one of my favorite authors Charlaine Harris! Goodnight bloggers!!

Rangers(:

I haven't blogged in forever, I'd have to say I kind of miss it! It's a pretty good day today, jeans day, rangers gear, and a laid back easy day(kinda). It's the best friends birthday today! Going out tonight with her and a few friends, hoping to have a good night tonight! I'm so sad, I finished my new favorite book a few days ago, it's over, and it was an amazing book! It's called Fatal Tide by Iris Johansen, it was the best one I have read in a while! Now I've started Utopia, by Lincoln Child, it's pretty good so far, haven't gotten to deep into it yet. I also recently bought Evolution Impossible, by Werner. I'm planning on getting settled down with that pretty soon too! I'm signing up for the SAT again in June, hoping to get a way better score! Ill be studying hard! I've also taken back to working out, jogging a mile a night on the treadmill, I think I need to defiantly step it up, bathing suit season is innnn!! And I don't want to wear a tank and surfer shorts anymore!! Anyways I'm kind of out of my rock phase and back to the good ole country music again, it's what I grew up with and it's what is staying(:! Ill have to get back on here and explain how the weekend went when its over!
